<p>They’ll make sure you’re steady on your feet and holding the paddle correctly before you go off on your own.  In addition, they will give you a handy water proof card with a map to the snorkeling areas and a chart of the different types of fish you will most likely see.  When you get tired of paddle boarding or kayaking you just jump in the water, cool off, and snorkel over the reefs, and get back on your board or kayak and snorkel in another spot.   It was one of the best days I had snorkeling in Puerto Rico.</p>

<p style="text-align: left;">As a by-product of the sugar making process, for rum production in Puerto Rico became a major industry in the 16<sup>th</sup> century. <a href="http://caribbeanbusiness.com/puerto-rico-sugar-industry-revival-announced">Sugar cane</a> juice (guarapo) is extracted and boiled at a high temperature. The process yields a syrup called molasses, which when mixed with water and is fermented, produces the distilled spirit rum.  This is just a taste of Puerto Rican  rum history and here are two places you can visit to learn more.</p>

<p>If you’re interested in the history of rum production in Puerto Rico, the Serralles Castle museum in Ponce is an interesting place to start.  This elaborate summer home of the family of Juan Serralles, the founder of the Serralles Rum Distillery, is the producer of the very popular <a href="http://donq.com">Don Q </a>Rum which is known for its distinctive flavor.   Build in the 1930’s, the mansion sits high on a hill with stunning views of Ponce and the Caribbean Ocean from its elaborate gardens and terraces.  Tours are offered of the mansion, which contain many of the family’s antiques, and includes information about the history of sugar cane production and rum distillation.   You unfortunately do not get any rum samples to taste here, this is strictly Puerto Rican rum history.   The rum is produced at the Serralles distillery in town, but they do not give tours.</p>
<p>You can purchase a ticket to just visit the castle or you can buy a combination ticket which will also include the Cruceta del Bigia and the Japanese Gardens which are across the street.  The Cruceta del Vigía or the Watchman’s Cross is a 100-foot-tall cross used by early Spanish settlers in the 1800s as a look-out for invaders and pirates.  This ten-story vertical tower with a horizontal sky bridge provides amazing views of the city of Ponce and the Caribbean Sea.  A Japanese garden was built on the grounds near the cross with the purpose of encouraging spiritual peace and harmony by the means of nature and Zen music. The garden features small lakes, rivers, bonsais, and bridges.</p>

<p>The Bacardi Visitors tour in San Juan is a popular tourist destination devoted to the history of Bacardi Rum.  The company actually began in Cuba and moved over to Puerto Rico in 1936 before Fidel Castro took power. The <a href="https://www3.bacardi.com/">Bacardi</a> brand&#8217;s fermentation process gives Bacardi rum its clear color and distinctive taste.</p>

<p>I would be remiss if I didn’t write about <a href="http://rondelbarrilito.com">Ron del Barrilito,</a> Puerto Rico’s oldest rum brand, and one highly esteemed, it is often called a “cult rum”.  Lauded for its deep, almost whiskey-like complexity, the two-star rum rests for three years, and the three-star is a blend of six- to ten-year-aged rums. Barrilito only exports to Spain and a few states.</p>
<p>As the story goes, in 1871, Pedro Fernández took over the property where his father was running a sugarcane plantation.  He had been producing small amounts of rum for guests. Fernández developed the secret rum formula, aged in Spanish sherry barrels that his family still uses today, and produced a smooth and mellow rum.   The small family run factory in Bayamon is not seeking endless growth. They only want to make excellent rum.</p>

Upon departing Villa Marina in Fajardo, on their comfortable 46 foot power boat, we head out to the island of  Culebra. After about a 45 minute ride, we first arrive at a secluded cove in the Luis Pena Channel and anchor while we snorkel the crystal clear warm waters.  We were not disappointed.  Schools of brightly colored fish, sea turtles, and stingrays were seen. Snorkeling is incredibly fun, relaxing, and a wonderful way to explore the ocean.  You can just drift through the water, relax, and enjoy the underwater scenery.</p>

Different snorkeling sites have vastly different marine life to see and experience. Some shallow areas can be filled with incredible life forms such as sponges, corals, and fish. Other spots, such as coral reefs, can be very rich with colorful and vibrant sea life.</p>

<p><strong><em>Prices are $95 per person plus tax, children 6-12 are $73, children under 6 are not permitted.  This is a day trip lasting from around 9:30-4. It was all good fun and added to the many great experiences we had throughout the day. The guides lead the way as each of the mini boats in the tour followed one another through the crystal clear waters toward the crystal clear waters of  Icacos. As the waves splashed up onto our boat, they provided a cool and refreshing reprise from the sun.</p>

I was impressed that the guide took the time to interpret the natural history of the reserve as he guided us through an amazing snorkeling trail.</p>
<p>We then headed to <a href="https://en.wikipedia.org/wiki/Cayo_Icacos">Icacos Ca</a>y. <p>Depending on the weather, the guides will lead you where conditions and snorkeling are best at the time.  We were supposed to go to Palominito Island, which is surrounded by coral reefs and was seen in the movie Pirates of the Caribbean 4, but the water was a bit too choppy for a visit.</p>

<p>Overall, driving in the mini boat was a unique way to visit the snorkeling sites of this area.  It added another dimension to the overall  snorkeling adventure and the guides did an excellent job leading our group both over and under the water.  It was an excellent half day trip and can’t <span style="font-size: 14px;">wait to do it again.</span></p>

<p>Traditional foods are part of a country’s heritage and are strongly rooted in the history and culture of the country you&#8217;re visiting. All I ask is that when you are visiting Puerto Rico you taste the local food.</p>
<p>I don&#8217;t want to hear that you ate at Senor Frogs, Morton’s Steakhouse, or the Cheesecake Factory. Find that local roadside stand, the beachfront hut, or the restaurant with a grandma cooking at the stove down that side road. You&#8217;ll not only get a taste of the food but the culture as well.  It&#8217;s time to eat like a local in Puerto Rico!</p>

It’s oftentimes shaped like a bowl and filled with pork, steak, chicken, or seafood and covered in garlic and olive oil, or a criollo (red) sauce. Some places will serve it as a side dish without the protein.  It is also common in Puerto Rico to make mofongo with cassava (mofongo de yuca), taro, and eddoe (mofongo de malanga y yautía), breadfruit (mofongo de pana), or a combination of cassava, ripe and green plantains (trifongo).  I’ve tried them all and each delicious and have their own unique flavor.</p>

<p>The <a href="http://allrecipes.com/recipe/238510/homemade-arepas">arepa</a> is a round, puffed dough (some places make it like a small donut without the hole, while others remind me of an Asian bao or steamed bun), which can be grilled, baked, fried, or steamed and stuffed or topped with pork, beef, or fish.  Arepas are one of my favorite foods in Puerto Rico and can be found in high-end restaurants as well as at roadside stands and beach-front vendors.</p>

<p>Whole roasted pig or<a href="https://en.wikipedia.org/wiki/Lechon"> lechon</a> is a traditional holiday food in Puerto Rico but it doesn’t have to be a holiday for you to try it.  There’s an entire town, Guavate, dedicated to cooking and serving this juicy and succulent meal all year-round. On the weekends, it&#8217;s a favorite place for locals to go to grab a meal, have a drink, and dance some salsa.  Take a ride along &#8220;pork highway&#8221; as it&#8217;s called and join the party.</p>

<p>The first time I was in San Juan and looking for <a href="http://caribbeantrading.com/limbers-a-puerto-rican-food-recipe/">Limber</a> I was directed to a nondescript building and told to walk into a barren lobby.  Skeptical and a bit afraid, I put my big girl pants on and walked inside.  A relief, I spotted the words Limber scribbled on a whiteboard, and a woman who looks like your nanna, tells you the day’s flavors in Spanish. Lemon, tamarind, mango, she said in half English, half Spanish.  With a plastic cup in hand, I sampled this frozen treat consisting of sugar and fruit.  It hasn’t changed in 40 years and is perfect on a hot day, or any day for that matter.</p>

Lindbergh, the first pilot to fly across the Atlantic Ocean. When Lindbergh flew alone to Puerto Rico in 1928, he was offered a frozen fruit juice. He enjoyed it and since then the locals started freezing the juice and called it Limber in honor of the man who inspired this much loved frozen treat.</p>

<h2 class="wp-block-heading">Largest Cave in Puerto Rico</h2>



<p>Located in northwest Puerto Rico in Arecibo, there’s a cave system called The Parque Nacional de las Cavernas del Río Camuy or Rio Camuy Caves. &nbsp;In the 1950s researchers discovered this large network of natural limestone caves and underground waterways carved out by the third-largest underground river in the world, the Río Camuy.</p>



<p>The canopy of trees and lush vegetation is dense, it’s hard to believe such an extensive cave system hides below the thick forest. Today there are more than 10 miles of mapped trails leading to 17 entrances and 220 caves. Only a small part of the cave system, a 268-acre park, however, is open to the public.&nbsp; It is home to 3 sinkholes through which an underground river runs, and 2 awe-inspiring caves which visitors can explore.</p>

<p>Tours are given five days a week and start with a short tram ride down through lush forest toward the opening of the cave. The walking audio tour begins with a 205-step stairway into the chilly, dark cave. &nbsp;Soft lights and railings help navigate the sometimes slippery path. The route leads past stalactites, stalagmites, and many unique and beautiful formations of the cave walls. The audio tour is accompanied by a tour guide who leads the way, provides additional information, and answers any questions you may have.</p>



<p>The cavern opens into an area where the Camuy River runs into the subterranean waterway.&nbsp; A sinkhole from above gives view to the vegetation hanging into the cave-like long thin fingers hanging down from a hand.&nbsp; The gentle tweets of birds, as they fly between the opening, gives a peaceful connection between light and life above, to the darkness below.</p>

<p>The Clara Cave chamber is immense, and it could fit a 20-story building inside. Towering boulders, vast openness, and the height of the ceiling evoke silence &#8211; only broken by the gentle splash water droplets and the echoes of the visitor&#8217;s hushed voices. The huge sinkhole above produces eerie shadows as beams of light enter the cave, creating a surreal dichotomy of light and dark. In another area of the cave, the Camuy River can be seen below as multiple bat species fly between the crevices of the walls of the cave.</p>



<p>This is a spectacular and informative tour.&nbsp; It’s best to get there when it first opens as the park will close when filled to capacity.&nbsp; Also, if you suspect rain the day you plan to go, call ahead as the park will close when it rains due to flooding. There are picnic and gift shop areas.</p>

<p>Set at the side of a cliff,<a href="http://www.cuevaventanapr.com/"> Cueva Ventana</a> means “Window Cave.” Unlike the Camuy caves which are underground, Cueva Ventana is stunningly located on the side of a cliff in Arecibo.</p>



<p>With admission, you get a helmet, flashlight, and a guide to walk you through the cave. During the 45 minute walk, trained biologists deliver insight into how the caves formed and the many creatures which call it home, such as insects, snakes, and bats. They also discuss the plants on-site, some of which are near extinction and provide the history of the original Taino Indians who were the original inhabitants of this area.</p>



<p>The cave offers impressive stalagmites and stalactites, however, the real highlight is when the passage finishes dramatically and the open face of the cliff frames the lush Río Grande de Arecibo valley far below. The scenic vistas from this vantage point have attracted visitors for decades, providing views across the entire valley and down to the ground below.</p>

<p>It was 1528 when the growing and prosperous city of Old San Juan experienced its first pirate attack.  To fend off the pirates the Spanish created two huge forts and walled in the city. Today, you don’t have to worry about pirate attacks, but as a result, you’ll find yourself immersed in the history and beauty of these 16th-century forts where soldiers once fought.</p>

<p>Guarding the entrance to San Juan Bay, El Morro, a six-level fort maintained by the National Park Services, is one of the most spectacular sites in Old San Juan. It’s where stone walls meet the crashing spray of the salty Atlantic Ocean and the vast green lawn touches the azure sky dotted by kites flying in the breeze pulled by happy children at play.</p>



<p>It’s an immense fort built in 1539 with 18-foot thick walls, ominous dungeons, cannons pointing seaward, barracks, and mazes of tunnels. Even though it was one of the largest fortifications built by Spain in the Caribbean, El Morro suffered several attacks from the English in 1595 and 1598, and the Dutch in 1625. In 1898, during the Spanish-American War, United States Navy ships fired upon the fortification. Puerto Rico surrendered and eventually became a commonwealth of the United States, which it still is today. &nbsp;During World War II, the U.S. government added an artillery fire control station.</p>

<p>In 1634 construction began on San Cristóbal and was considered a necessary addition to San Juan’s defenses in the wake of devastating attacks from the English in 1598 and Dutch in 1625. The fortress served as a means of defense for the city of San Juan in the event of land attacks from the east.</p>



<p>Fort San Cristobal is thought to be the biggest fortress constructed on the American continent. With its design inspired by the 17<sup>th</sup> century Vauban-style fortresses of France, notable features of the fort include a dungeon, moat, bunker, rooms for canons, and various tunnels.&nbsp; Two&nbsp;observation posts were added during World War II. Fort San Cristobal’s network of underground tunnels is open for exploration – the complex maze&nbsp;was&nbsp;originally utilized to facilitate easy communication and transportation of military materials, and add a level of difficulty for attackers.</p>



<p>At both forts, hourly tours are given by park rangers, in both English and Spanish, and provide great insight into the life of the soldiers and the history of the time. There is also a free shuttle bus that runs between them making it easy for you to see both forts in one day. </p>

<p>The first time I was in Old San Juan my eyes zeroed in on the words, Casa Corte Chocolate Bar. Like a moth to a light bulb, I plastered my face to the window to see an array of delectable chocolates on display and a long, sleek bar.</p>



<p>The establishment&#8217;s name upheld the true sense of the words, chocolate, and bar.&nbsp; Alcoholic drinks such as chocolate mimosas and white chocolate Russians can be ordered. The menu has a traditional list of foods, but with a unique chocolate twist. Cheese plates with dark chocolate sauce, grilled cheese with cheddar and dark chocolate, their “traditional” sandwich with roasted beef, pork, turkey, Swiss cheese and a dark chocolate sauce, &nbsp;and of course a variety chocolaty delicious desserts.</p>



<p>We sat at the bar and were immediately given small samples of hot chocolate.&nbsp; Rich and creamy, it was amazing, but since it was 90 degrees out, I wanted something cool. I ordered the chocolate frio, (cold chocolate). The tall, cold glass filled with sweet liquid chocolate, a frothy tower of whipped cream, and a chunk of chocolate which was placed on top as if it were the bride and groom on a wedding cake.</p>

Amazing, unique, innovative. &nbsp;It’s definitely a one-of-a-kind place to grab a drink, meal, snack, or even chocolates to take home.</p>

<p>Cristo Chapel is hallowed ground for those who are in need of a miracle. This 16th-century gothic chapel is formally known as the Capilla del Santo Cristo de la Salud, and more commonly known as the Cristo Chapel.</p>



<p>As legend has it, in 1753 a rider in a horse race, Baltazar Montanez, lost control of his horse plunging to the cliffs below. The Spanish Secretary of Government, Don Mateo Pratts was watching and cried out, “Christ of Good Health, save him!” The horse didn’t survive the fall, but the young rider was miraculously saved.</p>



<p>That same year Montanez built the small chapel on the exact spot where he fell over the cliff – atop the ancient wall that once protected the old city. The altar was built in shining silver and gold leaf, surrounded by beautiful oil paintings by the famous Puerto Rican artist Jose Campeche.</p>



<p>This tiny but well-appointed chapel hasn’t changed since Montanez built it.&nbsp; Over the decades believers who come to the chapel seeking miracles for physical illness have brought tiny silver ornaments, each one representing some ailing part of the body – legs, arms, heart. These small “Milagros” still decorate the walls today.</p>

<p><strong>Raíces Fountain</strong>, also known as the Roots Fountain is considered to be one of the most romantic spots in Old San Juan, particularly when the setting sun casts its shades of copper and gold across the water in the bay outlining the dramatic silhouette of the bronze statues. This collection, honoring Puerto Rico’s mixed African, Spanish and Taino/Amerindian heritage, is represented as a ship being steered out into the open sea with leaping dolphins leading the way to a bright 21st-century future. <p>As you walk further down Paseo de la Princesa you will come upon a large, <strong>red gate </strong>built in approximately 1635.&nbsp; This is the last remaining gate that was built into the massive defensive walls to protect the city was the main entry into the walled city during its Spanish colonial era. <p>Walk through the gate and view the <strong>blue cobblestones</strong> which line the streets and wander leisurely admiring the charming <strong>16<sup>th</sup> and 17th-century Spanish colonial homes</strong> encompassing bright colors and interesting architecture. The blue cobblestones are adoquine, cast from furnace slag which was brought over as ballast on Spanish ships. Time and moisture have given them their blue color.</p>

We&#8217;ll explore Puerto Rican history at this sugar plantation.</p>
<p>The rich soils of <em>Hacienda La Esperanza</em> were perfect for sugar cane production and in 1830 Fernando Fernández, a Spanish officer, was able to grow a profitable business due to the demand for sugar by the United States.  Slaves at that time, unfortunately filled the need for this labor-intensive industry, which is why there is the bitter taste of history at this sugar plantation.</p>

<p>Fernando’s eldest son inherited the estate, and in 1861 installed a West Point Foundry Steam engine.  This highly efficient new machine increased sugar production and he was able to expand to 2,000 acres of planted sugar cane.  This also increased his need for additional slave labor.</p>

<p>At the hacienda, complaints from the slaves are poignantly preserved and encased in a large glass case.  The grievances are crafted on what’s called a <a href="http://mundillo.com">Mundillo</a>, which is handmade bobbin lace.  The lace is created using wooden bobbins about the diameter of a pencil.  The bobbin is wound with thread, twisted, and crossed to form a design. Depending on the pattern, as few as two dozen or as many as several hundred bobbins may be used. The pattern formed the words of the complaints.</p>
<p>The grievances were about the horrible treatment, the abuse, and the lack of any possible help from authorities. It is very moving to see something so beautifully and intricately woven and at the same time read the vile, heartbreaking and painstaking abuses endured by the slaves.</p>

<p><em>There is also an impressive collection of machetes on display.  The machetes used by the slaves were shorter and blunt, making it useless as a weapon, an extremely poor tool and since sugarcane needs to be cut low to the ground, the short blade required the slaves to bend over all day resulting in life-long pain and disfigurement for many.</em></p>

<p>In what are the remains of the sugar mill building is the infamous steam engine which was used to crush the sugar cane in order to release the liquid. Before the steam engine, the sugar cane had to be crushed by hand, a time consuming and labor intensive process.  The highly embellished engine was built in 1861 in Cold Spring, New York by the <a href="http://westpointfoundry.org">West Point Foundry</a>, not far from my home.</p>

<p>The Conservation Trust of Puerto Rico fully restored the steam mill and today it is an amazing site to see in action. In 1979, it was even named a National Historic Mechanical Engineering Landmark. It is quite mesmerizing to watch all the intricate wheels and pistons turn and rise creating the steam needed to power this immense machine.  This lavishly decorated steam engine is the only West Point Foundry steam engine known to survive.</p>

<p>We also toured additional ruins of the sugar mill where the sugar cane juice was boiled.  The original “blood mill,” is also on display.  This manual press was used before the onset of the steam engine to extract the juice out of the sugar cane, oftentimes resulting in crushed hands or arms, thus the name, blood mill.</p>
<p>After the abolition of slavery in Puerto Rico in 1873, the sugar industry in Puerto Rico crumbled. However, the bitterness still remains as we are reminded of slaves who worked long and hard at this plantation. The hacienda went bankrupt, and in 1879 the land was sold.  Thanks to the Conservation Trust and their mission to conserve natural spaces and educate the public about important historical places, we are able to experience this piece of bitter history at such a sweet location. I recommend a visit to learn about <strong>Puerto Rican History at a Sugar Plantation (Hacienda La Esperanza).<br /></strong></p>

<p>Surfing on the west coast of Puerto Rico, known for its swells and surf competitions, is the place experienced surfers go. However, if surfing is on your bucket list but the thought of huge waves makes you a bit nervous,  there&#8217;s a great location called La Pared on the northeastern shores in <a href="http://luquillo.com">Luquill</a>o,  There are several places which rent boards and give lessons.  Give it a try! It&#8217;s a great place for beginners, like me, to learn.</p>

<p>Visiting the <a href="http://boulevardsandbyways.com/blog/puerto-rican-history-sugar-plantation/">Hacienda La Esperanza</a> in <a href="http://manti.com">Manati </a>is the only location that has a working steam mill.  It&#8217;s quite an amazing sight to see as the pistons go up and down, and the wheels go around, making steam to press the juices out of the sugar cane.  Enjoy an educational 2-hour tour.</p>

<p>Many <a href="http://boulevardsandbyways.com/blog/top-3-beaches-noetheast-puerto-rico/">beach</a> fronts in Puerto Rico were coconut plantations. The plantations are long gone, but the trees provide much-needed shade for your day on the beach. If you can reach a coconut, crack it open and enjoy the delicious juice inside. Oftentimes there&#8217;s a vendor on the beach selling the coconuts, saving you the trouble from hacking off the top.</p>

<p>Eating <a href="http://boulevardsandbyways.com/blog/best-lechon-puerto-rico/">lechon</a>, or roasted whole pork on a spit is a tradition in Puerto Rico.  Crispy skin on the outside and moist succulent meat on the inside.  On Pork Highway in Guavate there are a number of establishments which roast pig every weekend.  When you go, be prepared for a party. Music, food, and drinks flow freely in this town.</p>

<p>Smooth and sweet is how Puerto Rican coffee is often characterized. Today however, many of us have to search if we want delicious coffee from this region. This is why I&#8217;m recommending 3 places to visit for Puerto Rican Coffee.</p>
<p>By the end of the 18th century Puerto Rico produced more than one million pounds of coffee a year. The island at one time was the world’s seventh largest coffee producer, declining after the United States annexed the island from Spanish control and focused on sugar cane production instead.<br />
The good news is there’s been a resurgence of coffee production in the <a href="http://cordilleracentralregion.com">Cordillera Central Region</a> where the nutrient rich volcanic soil produces coffee which is high quality. Several of the traditional coffee haciendas have been revitalized providing not only delicious coffee but tours of the facilities make for an informative and interesting day out. Here are three places to visit for coffee production in Puerto Rico.<br />

<p>Hacienda Buena Vista is a historical landmark focusing on the history of coffee production. Buildings and one-of-a-kind historical machinery remain, together with a sophisticated system of waterworks. The nonprofit organization, <a href="http://paralanaturaleza.org">Para la Naturaleza</a> oversees the landmark preservation projects here and offers highly informative tours and educational opportunities. Visit their website for a list of tour days and times. Reservations are required and a small fee is charged.<br />

<p>This Eco and Agro tourism lodging destination make this hacienda a unique getaway. Not only can you stay overnight in a casita, you can embark on a tour which will take you on on a journey through the history of coffee production. Starting with breathtaking panoramic scenery of where the coffee is grown, you learn all the steps which go into making delicious coffee. Tours are offered Tuesday through Saturday at 11:00 am and have a duration of approximately two hours. Reservations are required and the cost is $20.00 per person.<br />

<p>Agricultural practices, coffee processing and tasting are all part of the tour at Hacienda Tres Angeles. This agro tourism farm is located in the town of <a href="http://adjuntas.com">Adjuntas</a>, Puerto Rico better known as the land of the sleeping giant due to the mountain range outline of a giant taking a nap. It’s cool climate and high mountains are an ideal setting for making the perfect coffee. Coffee tours through the field are available every Saturday at 10am. Breakfast and lunch are also available.
